Lighter Option

Ground Chicken or Turkey

Add a splash of olive oil to compensate for lower fat

Ground chicken and turkey are leaner, so add 1 tbsp of olive oil to the pan before the meat. The Blue Corn Taco Seasoning's roasted garlic and oregano notes come through even more cleanly on the lighter protein. Use the same amount of seasoning. Don't under-season lean meat.

Ingredients

  • 1.5 lbs ground beef (80/20), or ground chicken / turkey
  • 2 tablespoons Blue Corn Taco Seasoning
  • ⅓ cup water
  • ½ medium yellow onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp neutral oil
  • 8–12 corn tortillas, warmed
  • Toppings: shredded cheese, diced onion, cilantro, lime, and sliced jalapeño

Instructions

    Cook the aromatics. Heat oil in a large skillet over medium-high. Add diced onion and cook 3–4 minutes until softened and edges start to brown. Add minced garlic and cook 30 seconds until fragrant.

    Brown the beef. Add ground beef and break it into small pieces with a wooden spoon. Cook over medium-high heat without constant stirring so sections of meat brown rather than steam. Total cook time is 6–8 minutes. Drain excess fat if desired, but leave a little for flavor.

    Season and simmer. Reduce heat to medium. Sprinkle Blue Corn Taco Seasoning evenly over the meat. Pour in ⅓ cup water. Stir to combine and coat every piece of beef. Simmer 2–3 minutes until the water absorbs and the seasoning blooms into the fat. The mixture should be moist but not wet.

    Warm the tortillas. Char corn tortillas directly over a gas flame for 20–30 seconds per side, or wrap a stack in a damp paper towel and microwave 60 seconds. Charring adds flavor and is worth the extra step.

    Build and serve. Spoon seasoned beef into warm tortillas. Add toppings in order of what wilts fastest: cheese first (it melts from the hot meat), then onion, cilantro, squeeze of lime. Serve immediately. These don't wait well.
