This is a no-wrap rib recipe, cooked indirect from start to finish so the bark has time to set. Keep the ribs away from direct flame, and use a diffuser plate when your smoker or grill runs heat directly under the meat.

The brown sugar in Perfect Rack builds its own caramel when it hits the smoke, so these ribs turn out great without sauce. If you want a sweeter candy coating, brush on brown sugar BBQ sauce during the last 20 minutes and let it set.

Shred green cabbage and toss it with apple cider vinegar, a spoonful of mayo, and a pinch of Perfect Rack. The acid and crunch balance the rich pork and sweet glaze.

Choose Your Method

No wrap. Use hickory or cherry at 225–250°F and cook indirect the whole time. Perfect Rack's sugars build bark beautifully, but they should stay away from direct flame.

Ingredients

  • 1 rack St. Louis cut spare ribs
  • 3–4 tbsp Perfect Rack Rib Rub
  • Yellow mustard as binder
  • Apple juice for spritzing, optional
  • Hickory, oak, or cherry wood chunks
  • Honey glaze or your favorite BBQ sauce, optional for the finish

Instructions

  1. 01

    Prep the ribs. Remove the membrane from the bone side and apply a thin layer of yellow mustard as a binder. Coat all sides generously with Perfect Rack Rib Rub and press it in gently. Refrigerate for at least 2 hours, preferably overnight.

    Set the smoker to 225–250°F. Use hickory for stronger smoke, cherry for color and sweetness, or oak for a clean neutral profile. Stabilize the temperature before adding the ribs. Keep the ribs indirect; if your cooker has heat directly below the grate, use a diffuser plate.

    Smoke uncovered. Place the ribs bone-side down and keep them away from direct flame. Spritz lightly with apple juice only if the surface looks dry. Let the sugars in Perfect Rack build color slowly instead of forcing the bark too fast.

    Cook until the bark is set. Keep smoking uncovered until the rack has deep color, the surface is tacky, and the meat has started to pull back from the bone tips. For most St. Louis ribs, this is around the 5-hour mark, but tenderness matters more than the clock.

    Glaze only at the end. These ribs turn out great without sauce, but if you want a sweeter candy coating, brush with brown sugar BBQ sauce during the last 20 minutes. The rack is ready when it bends easily, the meat has pulled back from the bone tips, and the internal temperature is about 195°F.

    Rest 15 minutes, then slice between the bones. Serve dry or add a final light coat of glaze.

Two-zone setup, 275–300°F on the indirect side. Keep the ribs away from direct flame; the sugars in the rub need indirect heat.

    Use the same preparation. Set up a two-zone grill with the indirect side at 275–300°F. Make hickory or apple wood chip pouches, poke holes in the top, and place the pouches over the lit burner or coals. Keep the ribs on the indirect side the entire time.

    Cook indirect bone-side down. Replace smoke pouches every 60–90 minutes. Spritz lightly with apple juice only if the surface looks dry.

  3. Finish uncovered. Cook until the rack bends easily and the meat has pulled back from the bone tips. Glaze only during the final 20–30 minutes if you want a sticky finish. Rest and serve.

Cook uncovered at 275°F on a rack over a sheet pan. Without wood smoke, the rub becomes the main source of flavor.

    Rib Rub Butter

    Soften a stick of butter, blend with 1 tsp Perfect Rack Rib Rub and 1 tsp honey. Roll in parchment. Slice and serve on top of pork chops or grilled sweet potato.

    Sweet Potato Fries

    Toss sweet potato wedges with olive oil and Perfect Rack. Roast at 425°F for 25 minutes, flipping once, until the edges caramelize.
