Choose Your Method

Run 275°F until the cubes render, then glaze in a pan until sticky.

Ingredients

  • 3 lb skinless pork belly, cut into 1½-inch cubes
  • ¼ cup / 4 tbsp Perfect Rack BBQ Pork Rib Rub
  • 1 tbsp neutral oil or mustard
  • 3 tbsp butter
  • 2 tbsp hot honey or regular honey
  • 1 tbsp brown sugar
  • Your favorite BBQ sauce, enough to coat

Instructions

    Season the cubes. Toss pork belly with a little oil or mustard, then spread the cubes out in a single layer on a cutting board or sheet pan. Coat with Perfect Rack to a medium coating, turning the cubes as needed so all sides are evenly seasoned.

    Smoke at 275°F for about 2 hours, or until the cubes reach 175°F internal and the fat has started to render.

    Cover with glaze. Move cubes to a foil pan with butter, hot honey or regular honey, brown sugar, and enough BBQ sauce to coat. Cover and cook until the cubes reach 200°F internal.

    Uncover and set the sauce. Cook uncovered for 15–25 minutes, stirring once, until the sauce tightens and turns glossy. Rest 10 minutes before serving.

Use a rack first so the cubes roast instead of stew.
